Chicken Souvlaki (Grilled Chicken Skewers)

Delicious Grilled Chicken Skewers that have been marinated in olive oil, lemon, garlic and herbs

  • 1-1/2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves fresh garlic minced
  • 1/2 tablespoon fresh rosemary minced
  • 1 teaspoon dried Greek oregano
  • 1/4 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1/3 large red onion cut into pieces
  1. Cut chicken breast into 1 inch pieces and place in a ziploc bag. In a bowl, whisk together remaining ingredients (except onion) and pour into the bag with the chicken. Seal the bag and massage marinade into chicken so that all of it is coated. Place in the refrigerator to marinate overnight. The next day, place chicken and onion on skewers and grill until cooked though. Serve with warm flatbread and Tzatziki sauce (see recipe below). and suggested condiments
