    Holiday Chicken Salad

This festive Holiday Chicken Salad contains all the wonderful flavors of the season. Sweet, dried cranberries, crunchy pistachios and hints of orange and rosemary. It’s savory with a hint of sweet and oh soooo good! To make this yummy salad I started of by seasoning and roasting chicken breast. Once cooled, pull the chicken into small pieces. It is so versatile, with it’s rich meaty texture, it can be prepared so many different ways. Rubbed with spices and roasted or grilled is one of the easiest and tastiest ways to cook this pink beauty. Cook up a whole side with the skin on. When the salmon is done, you can lift it right off of the skin with a spatula. This will…

No, there was no Google or Food Network back then and the only Chefs that I can recall on television at the time were Julia Child and Justin Wilson (Comedic Cajun Chef). My mother enjoyed cutting out recipes and entertaining ideas from her favorite magazines (Sunset, Better Homes and Gardens, Family Circle and Woman’s Day) and pasting them in a big scrapbook to have for a ┬álater day. It was…
