    I made this yummy veggie filled Rainbow Chickpea Salad in an attempt to get more healthful veggies into my diet. I find it is so much easier to make healthful choices when I have something yummy already made up. Especially after a long day at work.     I recently had these Olive Crostini with Fresh Mozzarella at a friend’s little birthday gathering and they were so yummy that I could not stop popping them in my mouth!     I chose the name “Cancun Sunset” for this drink because it reminds me of the beautiful red and orange sunsets of Cancun (and Tequila Sunrise was already taken).     Creole Seafood Seasoning

    This Creole Seafood Seasoning is my “go to seasoning” that I use in all of my Cajun/Creole recipes. I use this in everything from Jambalaya to Gumbo to Ettouffee, and it also makes a great seafood rub. This is the seasoning that I also used in my Spicy Shrimp and Andouille Sausage in a previous post. It’s a super simple recipe too.     Pan Bagnat (Provencal Picnic Sandwich)

    Pan Bagnat is a popular french picnic sandwich that originated in Nice, France. Nice is located in the southeastern region of France, known as Provence, which borders Italy and the Mediterranean Sea. I just love the food from this region because it has more of of a mediterranean/italian influence to it. Focusing more on fresh fish and seafood, olive oil, fresh fruits and vegetables and fresh herbs.
