    Lemon, Herb and Garlic Marinade

This Lemon Herb and Garlic Marinade is so simple and fresh. It tastes like spring! Oh, how i’m wishing for spring. I don’t think it can get here fast enough! Lemon and herbs make the perfect seasoning for Pork, Chicken, Lamb and even Shrimp. Because of the high acidity of the lemon this is best used as a quick marinade. About 30 minutes or so. It’s also great for drizzling over grilled vegetables, grilled or baked fish, asparagus and grilled or roasted potatoes. Yum! I love it drizzled over Grilled Salmon. I am a huge fan of vinaigrette marinades and dressings, because they are so versatile. And such a great…

    Taco Tuesday! Ole! Guacamole

Taco Tuesdays would not be complete without a delicious, fresh guacamole. And Pico De Gallo. Since you are already making fresh salsa, why not use it to make your guacamole as well. Two birds, one stone, Right?!? When i’m cooking I like to make things that have multiple uses. Not only does it make cooking easier and less time consuming (because, who wants to spend more time in the kitchen after a long day at work?), but it also helps prevent waste. Don’t get me started on the food waste thing! Lol! Anyway, back to the guacamole recipe. First, prepare the Pico De Gallo using the recipe below. Then, take the avocados…

    Pico De Gallo

Pico de Gallo, also known as salsa fresca or salsa cruda, is a fresh tomato salsa made of fresh ripe tomatoes, onions, chili’s (jalapeno, serrano or habanero), cilantro, lime juice and salt. This traditional Mexican staple is perfect for chips, tacos, fajitas and more. Serve this yummy salsa at your next game day get together, taco party or anytime, really. Add shrimp and/or avocado for a special treat! To make, I start with fresh, ripe roma tomatoes. I use romas because they are a bit firmer than other tomato varieties, they hold their shape and don’t become mushy in the salsa. Cut the tops off of the tomatoes and then cut…

    Creole Seafood Seasoning

This Creole Seafood Seasoning is my “go to seasoning” that I use in all of my Cajun/Creole recipes. I use this in everything from Jambalaya to Gumbo to Ettouffee, and it also makes a great seafood rub. This is the seasoning that I also used in my Spicy Shrimp and Andouille Sausage in a previous post. It’s a super simple recipe too. I just toss all of the spices in the blender or food processor to blend and there you have it! Original Recipe From: The Commander's Kitchen Cookbook

Lemon Love: Meyer Lemon/Garlic Infused Olive Oil and Gremolata

Infused oils are such a simple and easy way to add flavor to your favorite dish.  During one of my many trips to Trader Joe’s, I came across a bag of beautiful Meyer Lemons. Without a plan for using them, I tossed a bag into my basket. I just love anything lemon flavored, so I knew that I would have fun experimenting with these golden beauties. That evening, as I was scrolling through one of my social media sites, a delicious looking recipe popped up on my news feed. One Skillet Lemon Butter Chicken and Orzo I made my own crockpot version using much of the same ingredients. The flavors…

Wow, can you believe that it’s already February 1st?! The big game is only 3 days away. What will you be serving or bringing to your Super Bowl party? Wings? Chili? No party is complete without the chips and salsa, right? I made this yummy Spicy Roasted Green Chili Salsa by roasting up some jalapeno peppers, fresh garlic and onions. Then added a small can of roasted green chili’s, fresh lime juice, cilantro and a bit of salt. It came out so yummy! But warning, it does have a kick to it! If you don’t care for the heat then just remove the seeds and pith from the jalapenos before roasting…
