    Mom’s Cornbread

Mom’s Cornbread, nothing warms the soul like a big pot of homemade soup or chili and a hot skillet of cornbread straight from the oven. I have tried many a cornbread in my lifetime, and all of them were good, but there is just nothing as good as mom’s cornbread. I’m not sure what she does to it but you can just taste the love. And it’s always best when it’s fresh out of the oven, slathered with a pat of butter. I like to crumble some into my chili as well. Yum! Here’s Mom’s Cornbread recipe. I’m not sure where it came from originally but it is my favorite.…

    Little Gruyere and Scallion Biscuits

These Little Gruyere and Scallion Biscuits or, as I like to call them, “addictive little yum bites” are so good!!! And addictive! Especially when they are still warm from the oven. I have been on a bit of a biscuit kick lately. Maybe because of the cold winter weather, biscuits are so warm and comforting. Well, any kind of “fresh out of the oven” homemade breads are comforting, really. But biscuits, they seem extra cozy to me. And they go with just about everything wintery. Imagine a big pot of creamy chicken and vegetables simmering on the stove and fresh homemade biscuits baking away in the oven. Or a a…

    Pineapple Banana Upside-down Banana Bread

Pineapple banana upside-down banana bread is not your typical banana bread. It’s more like a cake than a bread but I call it bread since it is baked in a loaf. Plus, it sounds better to say that I ate bread for breakfast instead of saying I ate cake! This rainy, fall weather has given me the baking bug. Along with a craving for something sweet to pair with a warm cup of coffee or tea. So, what is it that makes this banana bread so amazingly good? Is it that it is chalked full of chopped pecans, coconut and pineapple? Maybe it’s that caramelized glazed banana, pineapple and pecan…

    Rosemary Asiago Two Bite Biscuits

I made these little Rosemary Asiago Two Bite Biscuits a couple of days ago while working on ideas for Super Bowl/Mardi Gras/Valentines Day posts. These were adapted from a yummy looking buttermilk biscuit recipe that I stumbled upon during a google search. What did we do before google, anyway? Here is the original recipe that I found on a site called Cooking Maniac: Grandma’s Flaky Buttermilk Biscuits I added a cup of very finely grated Rosemary Asiago Cheese to mine (my favorite “go to” cheese at the moment) and a bit of granulated garlic. I also cut the biscuits out with a small round cookie cutter. They turned out quite cute…

Road Trip to Seattle: The Eagles, Pumpkin Muffins and Pike Place Market

It seems that as we get older, time just seems to fly by like the wind. A gust (life happens) comes along and before you know it another month has just flown by. Where did it go? what the heck happened? Wasn’t it just October 1st yesterday!?? Since time is definitely not standing still, I have decided to start marking things off that bucket list. My list is quite long so, if i’m going to see and do all of the stuff on my list, I need to get moving on this thing. The Eagles happen to be one of my all time favorite bands and I…
