    Cheese Please: Creating The Perfect Cheese Tray

      What types of cheese should you use to make the perfect cheese tray? That is a great question! About a week or so ago, my friend Julie had contacted me asking for cheese suggestions for a platter that she needed to prepare for an event she was attending.     Summer is right around the corner. That means hot sunny days and cold sips. One of my favorite summer sips is Sangria. I received this recipe many years ago from a friend who had just returned from a trip to Spain. She made this drink one sunny afternoon at a get together and I instantly fell in love with it.     Pan Bagnat (Provencal Picnic Sandwich)

    Pan Bagnat is a popular french picnic sandwich that originated in Nice, France. Nice is located in the southeastern region of France, known as Provence, which borders Italy and the Mediterranean Sea. I just love the food from this region because it has more of of a mediterranean/italian influence to it. Focusing more on fresh fish and seafood, olive oil, fresh fruits and vegetables and fresh herbs.     Kitchen Table Memiors

    It was in my Mother’s kitchen that my great love affair with food and entertaining first began. She was, and still is, an amazing cook. Gathering inspiration from her many magazine subscriptions, cookbooks and recipes swaps with friends and relatives. No, there was no Google or Food Network back then and the only Chefs that I can recall on television at the time were Julia Child and Justin Wilson (Comedic Cajun Chef). My mother enjoyed cutting out recipes and entertaining ideas from her favorite magazines (Sunset, Better Homes and Gardens, Family Circle and Woman’s Day) and pasting them in a big scrapbook to have for a  later day.     Rainbow Chickpea Salad

    I made this yummy veggie filled Rainbow Chickpea Salad in an attempt to get more healthful veggies into my diet. I find it is so much easier to make healthful choices when I have something yummy already made up. Especially after a long day at work. I like to be able to come home and just grab something out of the fridge and relax. How about you? I usually make up enough salad to last a few days.
